Slow Cooker Cowboy Casserole No One Can Resist!

This Slow Cooker Cowboy Casserole is the perfect one-pot comfort meal, featuring layers of seasoned ground beef, tender potatoes, kidney beans, sweet corn, and melted cheddar cheese. Easy to prepare, budget-friendly, and full of rich, hearty flavors.

Ingredients
  

  • 1 lb 450g ground beef or sausage
  • 4 cups diced potatoes Russet or Yukon Gold
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 15 oz diced tomatoes with juice
  • 1 ½ cups shredded cheddar cheese
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp salt
  • ½ tsp black pepper

Instructions
 

Brown the Meat:

  • In a skillet over medium heat, cook the ground beef until browned.
  • Drain excess fat and stir in Worcestershire sauce, garlic, smoked paprika, chili powder, salt, and black pepper.

Layer the Ingredients in the Slow Cooker:

  • Add the diced potatoes to the bottom of the slow cooker.
  • Layer the cooked beef on top, followed by kidney beans, corn, diced tomatoes, and onion.
  • Pour beef broth evenly over the mixture.

Slow Cook:

  • Cover and cook on low for 6-7 hours or high for 3-4 hours, until the potatoes are tender.

Add Cheese & Serve:

  • In the last 15 minutes, sprinkle shredded cheddar cheese on top. Cover and let it melt.
  • Garnish with fresh parsley and serve warm with bread or cornbread.

Notes

  • For a crispier texture, use tater tots instead of diced potatoes.
  • Adjust the spice level by adding cayenne pepper or chopped jalapeños.
  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • Freezer-friendly: Let cool completely and store in a freezer-safe container for up to 3 months.
