Ingredients
  

  • For the base:
  • 150 g 5 oz graham crackers or digestive biscuits, crushed
  • 50 g 2 oz melted butter
  • For the filling:
  • 200 g 7 oz cottage cheese
  • 150 g 5 oz plain Greek yogurt
  • 3 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • For decoration:
  • Fresh berries strawberries, raspberries, blueberries
  • Lemon zest or chocolate shavings

Instructions
 

  • In a bowl, combine the crushed graham crackers with melted butter until well-mixed.
  • Press the mixture firmly into the bottom of a springform pan about 20 cm (8 inches) wide. Refrigerate while you prepare the filling.
  • Blend cottage cheese, Greek yogurt, honey, and vanilla until smooth and creamy.
  • Pour the mixture over the prepared base and spread evenly with a spatula.
  • Refrigerate the cheesecake for at least 4 hours or until the filling is firm.
  • Garnish the cheesecake with fresh berries, lemon zest, or chocolate shavings before serving.
