Ingredients

  • Basic Ingredients
  • 1 cup Cottage Cheese
  • 1 cup All-Purpose Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 tbsp Olive Oil optional
  • Optional Add-InsAdd-Ins
  • Fresh herbs: parsley dill, chives.
  • Spices: garlic powder paprika, chili flakes.
  • Just a little shredded cheese makes it even richer.

Instructions

  • Prepare the Dough: combine cottage cheese, flour, baking powder, and salt in a large mixing bowl. Using a spoon or spatula, mix thoroughly until the dough takes shape. Should the mixture feel too sticky, gradually add flour, one tablespoon at a time, until it becomes easier to handle.
  • Knead the Dough : lightly flour a clean surface. Knead the dough gently for 2-3 minutes until smooth and soft, avoiding overworking it.
  • Divide and Shape: evenly divide the dough into four portions. Roll each piece into a smooth, uniform ball, and carefully press it into a flat disc around 1 cm thick.
  • Cook the Flatbread: heat a non-stick skillet over medium heat. Optionally, add olive oil for a golden finish. Cook each flatbread for 2-3 minutes per side or until golden spots appear.
  • Serve and Enjoy: serve warm with your favorite dips, spreads, or toppings.

Notes

Tips for Perfect Flatbread
  • Choose the Right Cottage Cheese: Full-fat provides creaminess, while low-fat is lighter; adjust flour for wetter cheese.
  • Don’t Overknead: Mix until smooth—overworking can make the bread dense.
  • Experiment with Flavors: Add your favorite herbs, spices, or a hint of lemon zest.
  • Try Gluten-Free Options: Replace all-purpose flour with almond or oat flour, adjusting the amount for dough consistency.
