Ingredients

  • 12 ounces egg noodles
  • 1 pound ground beef 80/20 or leaner
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme optional
  • 1 cup beef broth
  • 1 can 10.5 ounces cream of mushroom soup
  • 1/2 cup sour cream
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup shredded cheddar cheese optional
  • Fresh parsley for garnish

Instructions

  • Cook the Egg Noodles: Bring a large pot of salted water to a boil. Cook the egg noodles according to the package instructions until al dente. Drain and set aside.
  • Brown the Ground Beef: In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula. Drain any excess grease.
  • Sauté the Aromatics: Add the diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion is soft and see-through.
  • Season and Simmer: Stir in the salt, black pepper, paprika, and dried thyme (if using). Pour in the beef broth and Worcestershire sauce, then mix in the cream of mushroom soup. Give it a good stir and let it simmer for 5 minutes.
  • Add the Sour Cream and Cheese: Lower the heat and stir in the sour cream until fully incorporated. If using cheese, add it now and stir until melted.
  • Combine Everything: Toss the cooked egg noodles into the skillet, mixing everything together so the noodles are coated in the creamy sauce.
  • Serve and Enjoy: Garnish with fresh parsley and serve hot.

Notes

  • Use lean ground beef to reduce excess grease.
  • For a richer sauce, add extra sour cream or a splash of heavy cream.
  • Vegetable Additions: Stir in mushrooms, peas, or bell peppers for added nutrition.
  • Make it spicy: Add red pepper flakes or hot sauce.
Storage & Reheating Instructions
  • Refrigeration: Store leftovers in an airtight container for up to 3 days.
  • Freezing: Place in a sealed container and freeze for up to 2 months.
  • Reheating: Warm on the stove over medium heat with a splash of beef broth or milk to maintain creaminess. Alternatively, microwave in 1-minute intervals, stirring in between.
Recipe Variations
  • Cheeseburger Style: Add chopped pickles and cheddar cheese for a fun twist.
  • Mexican-Inspired: Replace Worcestershire sauce with taco seasoning and add diced tomatoes.
  • Low-Carb Alternative: Substitute egg noodles with zucchini noodles or spaghetti squash.
