  • Turn your oven to 375°F (190°C), let it preheat, and get a loaf pan ready—either grease it or use some parchment paper.
  • In a large mixing bowl, whisk together the cottage cheese, eggs, honey, and salt until you achieve a smooth and consistent mixture.
  • Using a separate bowl, thoroughly mix the flour, baking soda, and baking powder to ensure even distribution.
  • Add the dry ingredients to the wet mixture a little at a time, stirring just until combined. Avoid overmixing to keep the bread light.
  • Pour the batter into the prepared loaf pan, ensuring it spreads evenly, and smooth the top with a spatula for a uniform finish.
