Ingredients
  

  • 4 cups crumbled cornbread
  • 2 cups shredded cooked chicken
  • 1 cup diced celery
  • 1 cup diced onions
  • 2 teaspoons fresh sage chopped
  • 1 teaspoon fresh thyme leaves
  • 4 cups chicken broth adjust as needed for moisture
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon poultry seasoning

Instructions
 

  • repare the Cornbread: Bake cornbread according to your favorite recipe or use store-bought. Let it cool, then crumble it into a large mixing bowl.
  • Cook the Chicken: Use boiled or rotisserie chicken. Shred into bite-sized pieces.
  • Sauté Vegetables: In a skillet, melt butter and sauté diced onions and celery until softened and translucent.
  • Combine Ingredients: Add the sautéed vegetables, shredded chicken, crumbled cornbread, and fresh herbs into the mixing bowl. Gradually add chicken broth and stir until the mixture is moist but not soggy.
  • Season and Taste: Add salt, pepper, and poultry seasoning. Mix well and taste to adjust the seasoning if necessary.
  • Bake the Dressing: Preheat the oven to 375°F (190°C). Transfer the mixture to a greased 9x13-inch baking dish. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15-20 minutes until golden brown.
  • Serve: Let the dressing rest for 5-10 minutes before serving.

Notes

  • For added flavor, mix in cooked sausage, cranberries, or mushrooms.
  • If the mixture is too dry, add more chicken broth a little at a time before baking.
  • Make it vegetarian by replacing chicken with sautéed mushrooms and using vegetable broth.
