  • 1 cup fresh crab meat substitute with canned crab if needed
  • 1 cup heavy cream for the creamiest texture
  • 3 large egg yolks adds richness to the custard
  • ¼ cup grated Parmesan cheese optional, for added cheesy flavor
  • 1 clove garlic minced (for a subtle aroma)
  • Salt and pepper to taste (adjust seasoning as desired)
  • 2 tbsp sugar for caramelizing the top

Instructions
 

  • Preheat the Oven: Set your oven to 325°F (160°C).
  • Prepare the Custard Base: In a mixing bowl, whisk together egg yolks, heavy cream, minced garlic, salt, and pepper until well combined.
  • Incorporate the Crab Meat: Gently fold in the crab meat and Parmesan cheese, ensuring an even mixture.
  • Fill the Ramekins: Divide the mixture evenly among 4 small ramekins.
  • Bake in a Water Bath: Place ramekins in a baking dish filled with hot water halfway up the sides. Bake for 20-25 minutes or until the custard is set.
  • Cool and Chill: Remove ramekins from the oven and allow to cool. Store in the refrigerator and ensure it chills for at least 60 minutes
  • Caramelize the Top: Sprinkle sugar evenly over the custard and caramelize using a kitchen torch until golden brown.
  • Serve: Let the brulee rest for 5 minutes before serving.

Notes

  • For the best flavor, use fresh lump crab meat.
  • To caramelize the top without a torch, place ramekins under the broiler, watching closely to avoid burning.
